Broccoli Pasta


Dinner for 5 in under 30 minutes?  This recipe is for you.  It only requires 6 ingredients (we added broiled chicken, so 7) and the skill level needed to operate an easy bake oven. 

Start with a large pot of salted water.  Bring to a boil and throw in 4-5 heads of broccoli cut into florets.  When done, take broccoli out with tongs and return the water to a boil.



As it comes to a boil for the second time, cook 3-4 cloves of minced garlic and red pepper flakes to taste in 2-3 tbs. olive oil in a large saute pan.


Before the garlic browns, add one can of tomatoes without their juice, chopped, along with some salt.  When you add the tomatoes, throw 1-1.5 lbs. of pasta into the water.  Drain the pasta when al dente, then add it to the tomatoes along with the broccoli.  If using cooked chicken, add now.  Toss over the heat for about a minute and pour into a bowl.  Top with Parmesan cheese.


Enjoy! Preferably with a bottle of wine and good friends, as pictured above.
